Rhubarb Bread

1 1/2 cups brown sugar
2/3 cup salad oil
1 egg
1tsp. vanilla
1 1/2 to 2 cups fresh rhubarb, diced
2 1/2 cup flour
1 tsp. baking soda
1 tsp. salt
1 cup sour milk

To sour milk , add milk to one Tbsp. vinegar to make one cup; let set for 5 minutes.  Beat sugar,oil and egg.  Combine flour baking soda , salt and vanilla and  milk; add to first mixture.  Fold in rhubarb. 
Grease 2 loaf pans and pour in batter.  Bake at 325 degrees for 60 minutes or until toothpick  inserted in center of loaf  comes out clean.
