Sage-Roasted Squash

2 medium zucchini
2 medium yellow squash
3 tablespoons olive oil
2 tablespoons fresh sage
1 tablespoon minced garlic
salt and pepper to taste

Heat oven to 350 degrees. Cut squash into 1- inch pieces., toss with other ingredients, and roast until tender, 15-20 minutes. Season with salt and pepper to taste.

Zucchini Casserole Pie

3 cups of zucchini , sliced thin and quartered
1 cup of Bisquick
1/2 cup chopped onion
1/2 cup Parmesan cheese
1/2 cup of oil
4 eggs
2 Tbsp parsley
1/2 tsp salt
1/2 tsp pepper
1/2 tsp oregano

Mix all ingredients in a large bowl.  Pour into buttered pie pan.  Bake at 350 degrees for 45 -50 minutes, until brown and firm.  ( this recipe is great left over for lunch the next day !)
